New Potatoes, Artichoke pesto and Rocket

Ingredient for 1:
3 Roasted New potatoes
Rocket 50 gr
Pinenuts
Chives

Dressing:
Artichoke pesto (or just blend 4/5 Oil marinated Artichokes with 2 tbs of Extra virgin olive oil)
Salt and pepper
Balsamic vinegar
Extra virgin olive oil

How to roast the Potatoes:
Preheat the oven to 180°C/gas 4. Heat a heavy-based roasting pan on the hob over gentle heat and add enough olive oil to cover the base of the pan. Add the potatoes and season with rock salt. Fry gently, stirring, until the potatoes are lightly coloured - about 10 minutes. Transfer the pan to the oven and bake for 25 minutes, until the potatoes are cooked through and nicely coloured.

Patate, pesto di carciofi e rucola

Ingredienti per 1:
3 arrosto Patate novelle
Rucola 50 gr
pinoli
Erba cipollina

Condimento:
Pesto di carciofi (oppure frullate 4/5 carciofini sott'olivo con 2 cucchiai di Olio extra vergine)
Sale e pepe
Aceto balsamico
Olio extra vergine di oliva

Come arrostire le patate:
Preriscaldare ° forno a 180 C / gas 4. Scaldare una padella a fiamma bassa e aggiungete abbastanza olio d'oliva per coprire il fondo della pentola. Aggiungere le patate e condite con sale grosso. Soffriggere, mescolando, finché le patate sono leggermente dorate - circa 10 minuti. Trasferire la teglia in forno e cuocete per 25 minuti, finché le patate saranno cotte e ben dorate.
