Parmigiano, Sun dried tomatoes and Aubergines Wholegrain Pasta

Ingredients for 1:
1 Fried Aubergine
Shaved Parmigiano cheese 50 gr
5-6 finely chopped Sun dried Tomatoes
Wholegrain Fusilli Pasta 100 gr
2 Spring Onions

Dressing:
Extra virgin olive oil
salt and pepper

How to prepare the aubergine:
Cut it in to cubes. Heat up some oil in a wide based frying pan. Add in the diced aubergine and fry until it’s browned, soft and smells fragrant.

Fusilli con scaglie di Parmigiano, pomodori secchi e melanzane

Ingredienti per 1:
1 melanzana
Parmigiano a scaglie 50 gr
5-6 pomodori secchi tritati finemente
Fusilli integrali 100 gr
2 Cipollotti tagliati fini

Condimento:
Olio extravergine di oliva
sale e pepe

Come preparare le melanzane:
Tagliarla a cubetti. Scaldate l'olio in una padella a base larga. Aggiungiere la melanzana tagliata a dadini e friggere fino a quando รจ dorata e morbida.
