Anchovies, Beans and Rocket

Anchovies, Beans and Rocket (arugula)

Ingredients for 1:
Rocket (arugula) 50 gr
A handful of toasted pinenuts
Pinto Beans or Borlotti beans 100gr
6/7 Anchovies in extra virgin olive oil
A handful parsley

Dressing: Extra virgin olive oil, balsamic vinegar, Salt and pepper.

Acciughe, Fagioli e Rucola

Ingredienti per 1:
Rucola 50 gr
Una manciata di pinoli tostati
Fagioli Pinto o fagioli Borlotti 100gr
6 / 7 Acciughe in olio extra vergine di oliva
Una manciata di prezzemolo

Condimento: Olio extravergine di oliva, aceto balsamico, sale e pepe.


  1. This looks like an easy, healthy and quick salad. I use Arugula a lot my self in salads( love the peppery bite of it) and with the beans and anchovies,simple and yum!
    I generally tend to use anchovy paste while making a dressing, how do anchovies taste on their own? Salty I am guessing.

    Anchovies are most of the time preserved in salt and oil, that's why they are so salty.

    probably the flavor is not that far from your paste, but better.
