Chickpeas, Red onions and Sweet Potatoes

Ingredients for 1:
2 Red Onions
1 Sweet Potato cut into rounded pieces
both oven roasted at 210˚c for half an hour
Chickpeas 100gr
Mixed leaves 50gr (Baby Spinach, Rocket/Arugula and Watercress)

Dressing:
Extra virgin olive oil
Balsamic vinegar
Salt and black pepper

Ceci, cipolle rosse e patate dolci

Ingredienti per 1:
2 cipolle rosse
1 patata dolce tagliata a pezzi arrotondati
entrambi fatti al forno a 210 ˚ C per mezz'ora
Ceci 100gr
Insalata mista 50gr (Spinaci Novelli, Rucola e crescione)

Condimento:
Olio extravergine di oliva
aceto balsamico
Sale e pepe nero
