Roasted Vegetables, Scamorza and Mixed Leaves

Ingredients for 1:
Scamorza Cheese 50gr
1 Red Pepper
1 Aubergine (eggplant)
1 Courgette (zucchini)
1 Red onion
Mixed leaves (Lamb lettuce and Riccia)

Dressing:
Extra virgin olive oil
Balsamic vinegar
Salt and pepper

How to prepare the Roasted Vegetables:
Pre-heat the oven at 210 degreesC, place in a tray a chopped Red Pepper, Aubergine, Courgette and Red onion drizzle with extra virgin oil. Place the tray in the hoven for 20 minutes or more 'till golden.

Verdure arrosto, Scamorza e insalata mista

Ingredienti per 1:
Scamorza 50gr
1 peperone rosso
1 melanzana
1 zucchina
1 cipolla rossa
Insalata mista (Songino e Riccia)

condimento:
Olio extravergine di oliva
aceto balsamico
Sale e pepe

Come preparare le verdure arrosto:
Preriscaldare il forno a 210 gradi, mettere in un vassoio un peperone rosso, melanzana, zucchina e cipolla rossa gia' tagliati con dell'olio extra vergine. Posizionare il vassoio in forno per 20 minuti o piu fino a doratura completa.
