Aubergine, Pecorino and Spinach

Ingredients for 1:
1 Aubergine (eggplant) pan fried in Extra virgin olive oil
Shaved Pecorino Cheese 50gr
Handful of Pinenuts
Baby Spinach 50gr

Dressing:
Extra virgin olive oil
Balsamic vinegar
Salt and pepper

Melanzana, Pecorino e Spinaci

Ingredienti per 1:
1 melanzana saltata in padella in olio extravergine di oliva
Pecorino a scaglie 50gr
Una manciata di pinoli
50gr di spinaci novelli

Condimento:
Olio extra vergine di oliva
Aceto balsamico
Sale e pepe
