Aubergines, Lentils and Rocket

Ingredients for 1:
1 Fried Aubergine
Green Lentils 100gr
Rocket 50gr
Pinenuts
parsley
5/6 Black Olives

Dressing:
Salt and pepper
Extra virgin olive oil
balsamic vinegar

How to prepare the aubergine:
Cut it in to cubes. Heat up some oil in a wide based frying pan. Add in the diced aubergine and fry until it’s browned, soft and smells fragrant.

Melanzane, lenticchie e Rucola

Ingredienti per 1:
1 melanzana fritta
Lenticchie verdi 100gr
Rucola 50gr
Pinoli
Prezzemolo
5 / 6 olive nere

Condimento:
Sale e pepe
Olio extra vergine di oliva
aceto balsamico

Come preparare la melanzana:
Tagliarla a cubetti. Scaldate l'olio in una padella a base larga. Aggiungiere la melanzana tagliata a dadini e friggere fino a quando รจ dorata e morbida.
