Jerusalem Artichoke, Orange and Rocket

5/6 Jerusalem Artichokes (roasted in the oven at 200 degrees with a bit of oil per 45 minutes)
1/2 Orange (keep the other half, you will use it as a dressing)
Mixed Leaves (Rocket, Watercress and Baby Spinach) 100 gr
a lot of pinenuts

Dressing:
Grated orange zest
1/2 Orange juice
Salt and pepper
Extra virgin olive oil
1 tea spoon honey

Topinambur, Arancia e Rucola

5 / 6 Topinambur (arrostito in forno a 200 gradi con un po 'di olio per 45 minuti)
1 / 2 arancia (tenete l' altra meta', la la userete come condimento)
Insalata mista (rucola, crescione e spinaci novelli) 100 gr
molti pinoli

Condimento:
Scorza di arancio grattugiata
1 / 2 Succo d'arancia
Sale e pepe
Olio extra vergine di oliva
1 cucchiaio da tè di miele
