Middle East Salad - Fried Aubergine and chickpeas
SERVES 2

INGREDIENTS:
1 Pan fried Aubergine (around 200 gr)
Chickpeas with Sesame seeds 100 gr
Mixed Salad (Watercress, Spinach and Rucola) 150 gr
Chives

DRESSING:
Balsamic vinegar
Extra virgin olive oil
Salt and pepper

How to prepare the aubergine:
Cut it in to strips. Heat up some oil in a wide based frying pan. Add in the diced aubergine and fry until it’s browned, soft and smells fragrant.

Insalata Medio-Orientale - Melanzane fritte e ceci

INGREDIENTI PER 2:
1 melanzana fritta (circa 200 gr)
Ceci bolliti con semi di sesamo 100 gr
Insalata Mista (crescione, spinaci e rucola) 150 gr
Erba cipollina

Condimento:
Aceto balsamico
Olio extra vergine di oliva
Sale e pepe

Come preparare le melanzane:
Tagliarla a scriscioline. Scaldate l'olio in una padella a base larga. Aggiungiere la melanzana tagliata a dadini e friggere fino a quando รจ dorata e morbida.
