Parsnip, Red Onions and Kale

Ingredients for 1:
Half Shaved raw parsnip 100gr
A handful of raisins
A handful of walnuts
1 small raw red onion
Kale 50gr steamed for 2-5 minutes

Dressing: Extra virgin olive oil, balsamic vinegar, Salt and pepper.

Pastinaca, cipolle rosse e Cavolo

Ingredienti per 1:
Mezza pastinaca cruda taglata col pelapatate (se non la trovate usate pure delle carote) 100gr
Una manciata di uvetta
Una manciata di noci
1 cipolla piccola rossa cruda tagliata fine
50gr Kale (Cavolo nero oppure and spinaci o coste) fatto al vapore per 2-5 minuti

Condimento: olio extravergine di oliva, aceto balsamico, sale e pepe.

  1. Yum! i love the walnut raisin combo. i am a salad lover too. i love raw food and put every possible vegetable in to my salads. i have done a blog post on my salads but always looking for new inspiration!
