Tuna, Shallot and Kale

Tuna, Red Onion and Kale

Ingredients serving 1:
Albacore Tuna in Spring Water* 100gr
A handful of dried blueberries
100 gr of raw Kale massaged with the lemon juice
1 small shallot
A sprinkle of orange (or lemon) zest

Dressing:
1/2 lemon squeezed, black pepper, Extra virgin olive oil, Salt.

* This product comes from a fishery which has been certified to the Marine Stewardship Council's environmental standard for a well-managed and sustainable fishery. Sustainably fished in the Pacific Ocean. (This is what they say... I hope it's true)

Ingredienti per 1:
Tonno Albacore in acqua naturale * 100gr
Una manciata di mirtilli secchi
100 gr di cavolo crudo massaggiato con il succo di limone
1 scalogno piccolo
Una spolverata di scorza di arancia (o limone)

Condimento:
1/2 Limone spremuto, pepe nero, olio extra vergine di oliva, sale.

* Questo prodotto proviene da una pesca che è stata certificata dallo standard ambientale del Marine Stewardship Council per una pesca ben gestita e sostenibile. pescato in Modo sostenibile nell'Oceano Pacifico. (Questo è quello che dicono ... spero che sia vero)

Red Cabbage, Tuna and Sundried Tomatoes

Ingredients serving 1:
Albacore Tuna in Spring Water* 100gr
A handful of Sun dried Tomatoes finely chopped (leave them in warm water for 10 minutes so the become softer and drain them well)
A handful of pumpkin seeds
150 gr raw red cabbage finely chopped
2 small spring onions

Dressing:
1/2 lemon squeezed, black pepper, Extra virgin olive oil, Salt.

Cavolo rosso, tonno e pomodori secchi


Ingredienti per 1:
Tonno Albacore in Acqua * 100gr
Una manciata di Pomodori secchi tritato finemente (lasciateli in acqua tiepida per 10 minuti per farli ammorbidire, poi buttate l'acqua e scolateli per bene)
Una manciata di semi di zucca
150 gr di cavolo crudo rosso tritato finemente
2 cipollotti piccoli

Condimento:
1/2 Limone spremuto, pepe nero, olio extra vergine di oliva, sale.

2 Sardine in olio extra vergine di oliva

Condimento: olio extra vergine di oliva, succo di limone, sale e pepe.

Salmon, Avocado and Rice

Salmon, Avocado and Rice

Ingredients for 1:
100gr of fresh salmon cut into sashimi size or smaller
1 Avocado
Chives
White Rice 100gr
A handful of baby Watercress

Dressing: 3tbs Sesame oil (or extra virgin olive oil), 2tbs soya sauce, 1tbs wasabi powder (mix them all together in advance).

Ingredienti per 1:
100gr di salmone fresco tagliato a dimensione sashimi o più piccolo
1 avocado
erba cipollina
Riso bianco 100gr
Una manciata di baby crescione

Condimento: 3 cucchiai di olio di Sesamo (o olio extravergine di oliva), 2 cucchiai di salsa di soia, 1 cucchiaio di wasabi in polvere (mixateli assieme prima di aggiungerli all'insalata).

Ingredients for 1:
Half a raw cauliflower 100gr
Cherry tomatoes 100gr
A handful of parsley
A handful of Capers
Chives
5-6 Anchovies in extra virgin olive oil.

Dressing: Salt and pepper, Extra virgin olive oil, balsamic vinegar, red chilli pepper.

Ingredienti per 1:
Mezzo cavolfiore crudo 100gr
100gr di pomodori ciliegia
Una manciata di prezzemolo
Una manciata di capperi
5-6 acciughe in olio extravergine
Erba cipollina

Condimento: sale e pepe, olio extravergine di oliva, aceto balsamico, peperoncino rosso.

Black lentils 100gr
2 gems lettuce heads (100gr)

Dressing: balsamic vinegar, Extra virgin olive oil, Salt and pepper, Smoked Chilli.

Ingredienti per 1:
Sgombro affumicato 50gr
2 cipollotti
Una manciata di pinoli
Lenticchie nere 100gr
2 teste di lattugina (100gr)

Condimento: aceto balsamico, olio extravergine di oliva, sale e pepe, peperoncino affumicato.

Ingredients for 1:
Smoked Mackerel 100gr
A handful of Dried cranberries
2 spring onions
Kale 50gr steamed for 5-10 minutes
300gr of new potatoes oven roasted for 30min at 210˚c

Dressing: Extra virgin olive oil, balsamic vinegar, Salt and pepper, Smoked Chilli.

Sgombro affumicato, Cavolo riccio e patate novelle

Ingredienti per 1:
Sgombro affumicato 50gr
Una manciata di mirtilli rossi secchi
2 cipollotti
100gr Cavolo riccio cotto a vapore per 5-10 minuti
300gr di Patate novelle arrostite al forno per 30 min a 210˚c

Condimento: olio extra vergine di oliva, aceto balsamico, sale e pepe, peperoncino affumicato.

Prawns boiled and peeled 100gr
A handful of Sun dried Tomatoes
Wholegrain Fusilli 100gr
2 courgette (zucchini) skins julienne peeled and fried in a pan with a 1 tbs of oil

Dressing: Extra virgin olive oil, chilli flakes, Salt and pepper

Ingredienti per 1:
Gamberetti lessati e sgusciati 100gr
Una manciata di Pomodori Secchi
Fusilli integrali 100gr
2 bucce di zucchine tagliate julienne e scottate in padella con un 1 cucchiaio di olio

Condimento: olio extravergine di oliva, peperoncino, sale e pepe

Great documentary from Rupert Murray, which examines the consequences of unchecked, unregulated sea fishing across the globe

This is not a film about what might happen, this is a film about what has happened.

The collapse of the cod population saw the end of 40,000 jobs; the bluefin tuna is being hunted to extinction; it takes five kilos of anchovies to produce one fish farmed salmon.

The final chilling conclusion is that unless more radical steps are taken globally, including the reduction of overfishing, it will take just 50 years for the world's ocean's to be all fished out.
