Following #notavocadotoast with my friend @cheftomhunt we used to call this plate : “like and Avo on toast”. Charcoal bun, pea mousse, sun dried tomatoes, basil and balsamic glaze. One of my favourites at @tiosk_uk last summer. It’s very curious to see the reaction of people asking why not an avocado, they appreciated the environmental challenge. Most people thought complained that they wanted a real avocado on toast.
