1 Broccoli (cut the flowers off and roast them in a pan with 2 tablespoon of olive oil till tender)
Pinenuts, roasted with the broccoli (add them the last 5 minutes)

5/7 Sun dried Tomatoes finely chopped

Raw Baby Spinach 50gr
Jerusalem Artichokes 200gr
2 Leeks
Toasted sesame seeds
Thyme

Dressing:
balsamic vinegar
Salt and pepper
Extra virgin olive oil

How to prepare the Jerusalem Artichokes and Leeks:
Heat the oil in a pan and add Jerusalem Artichokes thin but roughly chopped and fry for 2-3 minutes. Chop the leeks finely and add it in to the pan. Fry for 15 minutes.

50gr di spinaci novelli crudi
Topinambur 200gr
2 porri
Semi di sesamo tostati
Timo

Condimento:
aceto balsamico
Sale e pepe
Olio extra vergine di oliva

Come preparare il topinambur e Porri:
Scaldate l'olio in una padella e aggiungere il Topinambur tagliato sottile e friggere per 2-3 minuti a fuoco medio. Tagliare i porri finemente e aggiungerli al tegame. Friggere per 15 minuti finche' morbidi e dorati.

Beetroot, White Cabbage and Carrots

Beetroot, White Cabbage and Carrots

Ingredients for 1:
1 Raw beetroot
Dried blueberries
2 Pan roasted Carrots Juilienne
1/4 of a white cabbage Pan roasted
2 leeks
Pinenuts

Dressing:
Extra virgin olive oil
Salt

How to prepare: Warm up a pan with about 2 tablespoons of oil over moderate heat. Slice the leeks in thin rigs, move them to the pan and fry until soft and golden brown (stir from time to time). Finely slice the carrots and add to the pan. Finely slice cabbage (exclude stem) and add to the pan, reduce heat and braise cabbage for about 20 mins (stir from time to time to ensure it cooks evenly).

Peal the beetroot and cut it into cubes and add it at the end.

Barbabietole, cavolo bianco e Carote

Ingredienti per 1:
1 Barbabietola Cruda
Mirtilli secchi
2 Juilienne di carote arrosto
1 / 4 di un cavolo bianco arrosto
2 porri arrosto
Pinoli

Condimento:
Olio extravergine di oliva
Salt

Come si prepara: Riscaldare una padella con circa 2 cucchiai di olio a fuoco moderato. Affettate i porri in sottili anellini, metterli nella padella e soffriggere a fuoco lento e dorate (mescolare di tanto in tanto). Affettare finemente le carote e aggiungere alla padella. Finemente cavolo bianco e aggiungere alla padella, ridurre il calore e stufare per circa 20 minuti (mescolare di tanto in tanto per verificare che cuoce in modo uniforme).

Sbucciare la barbabietola e tagliarla a cubetti e aggiungerlo alla fine.
