Broccoli, Green beans and Leeks Brown Rice
Ingredients for 1:
Brown rice 100gr
1 small Broccoli
2 leeks
A handful of Green beans
Chives
Extra virgin olive oil
Salt
PREPARATION:
Heat the oil in a pan and add the chopped green beans and fry for 5-10 minutes.
Add leeks finely chopped. Chop the broccoli and divide into stalks and heads.
Add the broccoli heads and fry for other 10 minutes.

Ingredienti per 1:
Riso 100gr
1 piccolo Broccoli
2 porri
Una manciata di fagiolini
Erba cipollina
Olio extra vergine di oliva
Salt
PREPARAZIONE:
Scaldate l'olio in una padella e aggiungere i fagiolini tagliati a pezzi e friggere per 5-10 minuti. Aggiungere i porri tritati finemente. Tagliate i broccoli e dividete in steli e teste. Aggiungere le teste di broccoli e friggere per altri 10 minuti.

Cabbage, Mung Bean Sprouts and Ginger
Ingredient for 1:
Raw Cabbage 50 gr
Mung Bean Sprouts 30 gr
1 carrot
1 red onion
1/2 broccoli (about 50 gr)
grated and fried fresh ginger (about 10 gr)
Dressing:
Extra virgin olive oil
Soy Sauce
Salt
Preparation:
Cut the cabbage very thin and put it aside. Slice the onion very thin and place it in pan with oil, then add the mung bean sprouts, broccoli and carrots sliced very thin (with a potato peeler is very good) and fried them for 15 min. Add a bit of soy sauce and salt to taste.
Separately, roast the fresh grated ginger with a table spoon of oil till golden brown.
Add to the base of the sauteed vegetables raw cabbage and ginger.

Cavolo crudo, germogli e Zenzero
Ingredienti per 1:
Cavolo crudo 50 gr
Germogli di fagioli Mung 30 gr
1 carota
1 cipolla rossa
1 / 2 broccolo (circa 50 gr)
grattugiato e fritto zenzero fresco (circa 10 gr)
Condimento:
Olio extra vergine di oliva
Salsa di soia
Sale
Preparazione:
Tagliate il cavolo molto sottile e metterelo da parte. Tagliate la cipolla molto sottile e mettetela a soffriggere con l'olio, poi aggiungete il Germogli di fagioli Mung, il broccolo fagliato sottile e la carota taglata molto sottile (col pela patate viene molto bene) e saltate il tutto per un 15 min. Aggiungete alla fine un po' di Salsa di soia e sale a piacere.
A parte, arrostite lo zenzero fresco grattuggiato con un po' di olio finche' dorato.
Aggiungete alla base di cavolo crudo le verdure saltate e lo zenzero.

Green Beans, Courgettes and Mint Wholegrain Penne
Ingredients:
Green beans 50 gr
2 Courgettes
Wholegrain penne 100gr
1 red onion
2 tbs unsweetened Soya milk
Dressing:
Salt
black pepper
Smoked Chilli
Extra virgin olive oil
toasted sesame seeds
fresh mint
Preparation:
Cook the pasta according to the packet instructions and set aside in a bowl.
In a pan, heat the oil, add the onion finely chopped and cook for five minutes, or until the onion is soft and golden.
Add the green beans, the courgettes and the milk and cook at medium heat till the courgettes at soft. Add sea salt as preferred.
Serve on top of the pasta with plenty of sesame seeds, fresh mint and smoked pepper flakes.

Penne ai fagiolini e zucchine
Ingredienti:
Fagiolini 50 gr
2 zucchine
Penne integrali 100gr
1 cipolla rossa
2 cucchiai di latte di soia non zuccherato
Condimento:
Salt
pepe nero
Affumicato Peperoncino
Olio extra vergine di oliva
semi di sesamo tostati
menta fresca
Preparazione:
Cuocere la pasta secondo le istruzioni del pacchetto.
In un tegame, scaldare l'olio, aggiungere la cipolla finemente tritata e fate cuocere per cinque minuti, o fino a quando la cipolla è morbida e dorata.
Aggiungere i fagiolini, le zucchine e il latte e cuocere a fuoco medio finché le zucchine sono morbide. Aggiungere il sale a piacere.
Servire sulla alla pasta con abbondanza di semi di sesamo tostati, menta fresca e peperoncino affumicato.

Mozzarella, Roasted Courgettes and Black Olives

INGREDIENTS:
Organic Mozzarella cheese 125 gr,
2 Courgettes 100 gr
1 Red onion
1 leek
12 Black Olives
Lettuce 150 gr
Pinenuts (3 tablespoons)
PREPARATION:
Heat the oil in a pan and add the leek and the onion and fry for 2-3 minutes.
Chop the courgettes and add them in to the pan. Fry for 15 minutes.
Let them chill a bit before adding it to the rest of the salad.
DRESSING:
Balsamic vinegar
Extra virgin olive oil
Black pepper

INGREDIENTI PER 2:
Mozzarella da agricoltura biologica 125gr
Zucchine 100 gr (2 medie)
1 porro
1 cipolla rossa
Lattuga 150 gr
Pinoli (3 cucchiai)
Oliuve nere 12/15
PREPARAZIONE:
Scaldate l'olio in una padella e aggiungete la cipolla e il porro soffriggere per 2-3 minuti. Aggiungere le zucchine e fate rosolare per 15 minuti.
Lasciateli raffreddare un po 'prima di aggiungerli al resto dell'insalata.

Heat the oil with the chilli flakes in a pan and add the chopped onion and fry for 5-10 minutes.
Add red pepper sliced into thin strips and than the Snap peas.
Chop the broccoli and divide into stalks and heads.
Add the broccoli heads and fry for other 10 minutes.

Extra virgin olive oil

Smoke chilli
Soya sauce

Ingredienti per 2 persone
INGREDIENTI:
Piselli 200 gr
1 peperone rosso
Riso basmati 200 gr
broccoli 100 gr
1 cipolla bianca
un sacco di peperoncino
Anacardi
PREPARAZIONE:
Scaldare l'olio con il peperoncino in una padella e aggiungete la cipolla tritata e lasciate friggere per 5-10 minuti.
Aggiungere il peperone rosso tagliato a strisce sottili e poi i piselli.
Tritare i broccoli e dividete in steli e teste.
Aggiungete le teste di broccoli e friggete per altri 10 minuti.
Alla fine aggiungete il riso basmati.

1 Pan fried Aubergine (around 200 gr)

How to prepare the aubergine:
Cut it in to strips. Heat up some oil in a wide based frying pan. Add in the diced aubergine and fry until it’s browned, soft and smells fragrant.
